Vill’Antica Balsamic Vinegars are obtained through careful mixture of vinegars, some of which have been aged for more than 10 years. The musts used to prepare the Balsamic Vinegars of Modena originate strictly from grapes of vines found in the province of Modena. Once produced, the premium Modena Balsamic Vinegars are matured and aged in barrels made of various types of wood. During that period, vinegars grow into becoming the distinct Balsamic Vinegars of Modena.

Livio Pesle has selected a very good Modena Balsamic Vinegar, produced by a small farm which utilizes only the juice of their grapes produced in the area of Modena. Using Italian wine as a base for his inspiration, Pesle then adds fine Balsamic Vinegar of Modena to the mix. This dark gelatin condiment is made from wines from the region of Friuli, cultivated in his own vineyards. Perfect with parmesan chese, roasted meats or fish carpaccio. Artfully packaged, it also makes a lovely Italian gift.
